White Sandwich Bread





Made this last night. Little one run out of bread for school. Texture is soft and have abit of spring to it. Good to eat. I might have to lay off bread for a wee while as my newphew and my girl is really over stuffed with bread bread and bread. What to do, they are my faithfully guinea pigs. I love to watch my kaki enjoys my creation bah!

Ingredients

500g bread flour
1 tsp salt
12g (one sachet) instant yeast (Use about 50ml of the water, warm in micro and add in yeast to sit for 5-10 minutes before hand)
1 ½ tsp bread improver
20g sugar
1 ½ tsp melted butter
100ml butter milk
255ml water

Set bread machine in dough mode. Place all dry ingredients into the machine follow by the wet ingredients. Allow machine to work full cycle. Remove from machine when completed the cycle. Punch the dough and knead into long oblong shape and put it into sandwich bread tin. Cover and let to rise double in size. Glaze dough with egg wash and bake in preheated 230 oven for 35 minutes. Remove and cool before slicing or store as a whole in bread tin.

Note: Even though my bread machine could knead and bake on its own, I find it more satisfying to use traditional bread tin. Mainly because I am not particularly like my bread to have a little hole underneath where the kneading arm of the machine was.

I sometimes cut into bun size and make it into dinner rolls etc..

Keep posting many pictures into the blog but still havent come up with the intention to post the recipe details for those pictures. Winter must have the key influence in the lazy bug in me. Promise I will post one of these days ok...

Moist Banana Chocolate Cake




Rampaging through my baking stock pile this morning. Eee, didnt know I have bought so much stuff and have not put in good use. Some even have expired! Thinking that I have not bake many cakes recently, I suddenly have the enthusiastic to make one. It came out really ok lah. Very banana fragenty, had a piece already. Diet tomorrow..

Angku Kuih


First time making angku kuih. The dough is abit difficult to handle. I don't have the kuih mould so I just roll it up by hand. I put red bean paste as the filling. Lont time hasn't eat them so I find them very tasty. I had 2 (hee). Still need to perfect the recipe though...

Home Make Tou Fu take 2


This is my home made Tou Fu Press. Spent 2 hours banging away in the shed to create this rather practical work piece(not too presentable lor). It serve the purpose, and I am happy. As this kind of gaggets it is not possible to obtain from shops. Have to make do with whatever comes handy.

This is the inside of the press. I made two lids; one placed under and one on top of the tou fu fa wrapped in cotton lining. And I stuck heavy (what chu ma call it?!) and a tub of water to weigh it down. After that I went shopping

This is the end result of my press. It is far better texture than my first attempt. But the skin is abit soft and tends to catch the cotton lining. As a result, the surface is kind of uneven. I made Ma Po Tou Fu that night! Yamm.

Plain Chu Chang Fen


Second try on this recipe. I use cloth technique which I wrap a piece of cloth over a big pot with water inside. This method is better than the previous one (using the tin in a wok). Although my yield is much thinner than my first trial, it is still not up to the standard of which I frequently sampled in "Yam Cha" session. Well, still worth the try.

Banana Bread


My first time making Banana Bread. It was abit soggy when I first put into the bread machine. I think its because I have put three banana mash. I then add abit more flour and it turns out a little denser but still soft. The smell! Yumm...

Roses


Its autumn now, autumn blosoms are busy displaying their colors before going to sleep. I have this little rose bush which is extra special to me as it has so many different colors on one single plant. The young buds are actually bright yellow in color. Then they turn dark pink and then as they grow older, they turn soft pink. Pretty isnt it?

Crazy Parsely


I stuck one parsely seedling in the pot few months ago. It didnt grow very big until I put a sprinkle head at the roots. Now it is just going crazy!

My wholemeal flour creations are definetely improving "gradually". This buns are extra soft and nice to eat. As I am so keen in whole meals(because my kid is addicted to bread lah!), I thought I have a go again today. Very happy with the result.

Butter Bread


Bread flour is easily available in Perth. It comes in many sizes, and this 5 kilo bag is ideal for me as I sometimes over stored the flour if I get bigger ones.

Little Carrot


My Kid had the urge to do some planting few months ago. In order to nurture her interest in gardening, We went out and bought some carrot seeds and strawberry seedlings. We went home and prepared the bed and sowed the seeds. Everything looked well and satisfying. We dont have to water the plants as we have installed a spray sprinkles at the bed.We then went on a few weeks holiday hoping that when we come home, the carrot and strawberry is growing strongly. Well, it hasnt. The sprinkle system went bucked and when we got home, the carrots were half dead and the strawberry were wiped out. We managed to revive the poor plants but it has somehow stunt the growth.
This morning my daughter decided to harvest her carrot. Hee, thats how big it is!

Chicken Mushroom Sticky Rice


This dish is so yummy and filling. I piled the

chicken and mushroom on top of the sticky rice. Sometimes if I make enough sticky rice then I would half the rice and place the mushrooms and chicken in the middle instead. Anywhere it taste just as good.

Spicy Wings


Ingredients
6 pcs Chicken wings (chopped in half)
2 Gloves of garlic (mashed)
2 tps light soya sauce
1 tbsp Oyster sauce
Dash of Pepper
1 tps Chilli Powder
1 tps Chinese Wine
2 tbsp Corn Flour
Put all ingredients into a bowls with the chicken wings. Mix them and put them aside for at least an hour( the longer the better it taste!).
Heat enough vegetable oil in a wok until hot. Put few wings into the hot oil to fry, watch not to put too many in at a time to prevent sticking. Fry until golden brown. Remove wings from hot oil and place on kitchen towels to drain access oil. Serve hot.

New Discovery



There are things in life that we sort of discover each day along the way. I have been to farms and zoos alot of times. Most of the time you tend to look at the animals as a whole. Until one day I looked into its eyes up close (its my friend Billy!). I only realised those gazing eyes are not only bright, its pupil is soo different. It is long trangle shaped, how facinating for me!

Cheese Bread with Spam



This bread is really soft inside and crusty on the outside. Very tasty for kids to bring for school lunch. It is delicious on its own.
Cheese Bread with Spam

Ingredients
3 1/4 Bread Flour
12 g Dried yeast
1 Tsp Bread improver
1 Cup low Fat Milk
4 Tbsp Glucose Syrup
1 Egg
4 Tbsp Melted Butter
1/2 tsp Salt
1 Cup Grated Cheddar Cheese
1 Tin Spam meat(sliced into long chunky strips)

Place all ingredients except the spam, in the bread machine and set on dough mode. Allow the machine to work its full cycle. When it peeped, removed from the machine and divide into three portion. Roll dough on floured board into a long oval shape(approximate to the length of baking tin). Place spam meat in the center; lengthwise along the dough and wrap dough around it. Do two dough with spam luncheon meat. Roll the third dough into the same length as the previous two dough. Then cut into three strips length wise and plaid the dough. Put the two spam dough along side into the baking tin and place the plaided dough on top. Leave to prove for 50 minutes in warm area. Egg wash the dough and bake in a preheated 190c oven for 30 minutes. Serve warm.

Too many miles, too thirsty!

Its only approx 8 hours from Perth. Never was keen to go to New Zealand because of the long hours (which I was told more than 10 hours?!). Now that I know, I wish I have visited the place sooner. What a beatiful country it is. So scenic and peaceful. The scenery is so breath taking and green green fields with cows and sheeps, surely I will be visiting again. This time, I will take longer than 8 days for sure.
